Squash fritters and cucumber garlic sauce

Here in the Mitten state, it feels like Winter hasn't even come! I usually spend Winter months wrapped up like a burrito in front of the fireplace, with a good book and hot a drink (or Manhattan) but this year just hasn't been the same! Sunny days reaching up into the 50's has my need to cook heavy hot foods escaping me...


This delicious dish of squash fritters is a tasty alternative to fries and lighter than potato pancake. We use Summer squash from the garden and or zucchini, but feel free to experiment!





I keep a mandoline slicer handy for recipes like this because its makes a difference in the consistency of the fritters.

  1. preheat your oven to 350 degrees.

  2. Cut or shred 3 small yellow squash (after washing of course)

  3. Let it rest between two plates wrapped in paper towel for two hours. I start this in the morning to have a snack in the afternoon or an app for dinner!

  4. once it's lost a good deal of it's water through the draining, put it into a bowl and add two eggs and tablespoon of mayo.

  5. I prefer diced garlic, salt, pepper, paprika, and sometimes if I'm feeling wild and unpredictable, I'll even add 1/4 tsp. of curry! I've made this with 1 table spoons of flour added as well, but I've been working hard on lowering my *glyphosates.

  6. Line a large cookie sheet with parchment paper.

  7. Once your mixture is ready to go, you can use a small baller to keep them the perfect size.

  8. The last step of this is to whip together a special sauce. I really love adding a Middle Eastern style Cucumber sause. It gives you that extra zing to ride along with our milder squash.


Special Sauce


You can use:

  1. 2 cups of plain Greek Yogurt

  2. The juice of one large lemon

  3. 2 tablespoons of minced garlic

  4. 2 cucumbers chopped into small cubes

  5. Salt to taste


For those of you allergic to vegetables, (I'm always shocked at how picky some adults are, lol) You can always skip these fritters altogether and put this over grilled chicken or hot pita or naan that you've toasted.
